I just received this long anticipated cookbook in the mail and I cannot even begin to share how excited I am. The compilation of recipes by the bloggers I already know, love and follow added to a few new ones I had not known are truly fantastic. I already have post-its on 20+ recipes I want to try out ASAP! Thank you all for taking the time to collaborate on this new cookbook. Being a low-carber for the last year has been quite the adventure and I honestly do not know how I would have done it without these wonderful folks, their ideas, blogs and mouth-watering recipes.
No deprivation here!, December 19, 2011

Jennifer Eloff was a true pioneer in the low-carb cooking world. She has been writing cookbooks since 1994 when she lived in Canada where three of her books made the Canadian Best Sellers List.

Jennifer's specialty is breads and baked goods and many of the things that have become standard practice for most of us were her innovations. I became acquainted with Jennifer through her blogs and by e-mail and now consider her a good friend although we have never actually met.

Jennifer hatched the idea to put together a cookbook that was in fact, really 5 cookbooks in one by 5 different authors. I was invited to be a 6th, but sadly had to refuse as I was already committed to a book of my own. This book is the first of a series, however, and I am thrilled to be on board for the 2nd installment. "Low-Carbing Among Friends" also contains contributions from 6 well-known personalities in the low-carb community who served as advisers and supporters.

The timing was perfect for this new book, which is not only low-carb but gluten-free as well. The first print run sold out in pre-sales almost immediately, just as I expected. You can go to Jennifer's website to preview some of the yummy things this team of friends has cooked up for you. You are sure to be amazed to see how sumptuous and indulgent low-carb, gluten-free cooking can be.

I have been lowcarbing for over 9 years and love to cook. What a wonderful cookbook this is for those of us who don't use flour or sugar. It's also perfect for diabetics, too.
Jennifer posted my lowcarb milk recipe in this book and I am honored to have a tiny part of this cookbook. Many other wonderful cooks have contributed great recipes for
the lowcarb/diabetic/gluten-free community.

Bringing Together The Low-Carb Community In One Cohesive Voice, November 17, 2011

This review is from: Low Carbing Among Friends: Gluten-free, Low-carb, Wheat-free, Sugar-free, Friendly to, Paleo, Primal, Wheat-belly, Atkins, Diet, Recipes Cookbook (Gluten-Free Low-Carb ing, Among Friends, V1) (Perfect Paperback)
As someone who had his life radically changed as a result of the healthy low-carb lifestyle change that started for me on January 1, 2004, I know the power of sharing what I've discovered with as many people as possible. I've been privileged through my "Livin' La Vida Low-Carb" projects (books, blogs, podcasts, etc.) to become a big part of this loving and ever-expanding community of people who realize that high-fat, moderate protein, low-carb living is so much more than about simple weight loss. It's an effective way to become optimally healthy for a lifetime!

What Ian and Jennifer Eloff have done with LOW-CARBING AMONG FRIENDS is bring together this low-carb community in one cohesive voice to boldly proclaim what the low-carb lifestyle has done to change the world and to show others how they can do it in their own life through mouthwatering and delicious recipes. Featuring some of the top names in the low-carb blogosphere, they have accomplished a feat that has yet to be done previously--joining together hand-in-hand with the people working behind-the-scenes in the world of low-carb living helping change the lives of real people. From YouTube video star Kent Altena to nutritionist Maria Emmerich and even a few names you may not recognize but are doing incredible work, this first book in what is sure to be a bestselling series starts off with a bang.

And it's not just laypeople involved either. Several well-known medical doctors from around the world make contributions to this book as well as high-profile bloggers like Dana Carpender. I was privileged to be a part of this project and will be contributing to future editions in this series, too. If you're new to low-carb living and need some helpful ideas about how to implement gluten-free, low-carb recipes into your new lifestyle change, then GET THIS BOOK! Even long-time low-carbers will enjoy getting a fresh new perspective on their diet of choice that will surely reignite the enthusiasm about this way of eating that has been a cornerstone in their health pursuit for so many years. You won't regret owning a copy of this amazing book!

just a question about the book, is it basically whole foods or do they use a lot of artificial sweeteners and specialty items, i.e. carbquick flour, etc? thanks for your info.

Great questions! It is mostly real foods with options to choose the sweetener of your choice.

Kent D. Altena says:

As one of the authors, I can talk about my foods. I do sweeten my dessert items with liquid sucralose, but the sweetener of choice is up to the reader. I have found Splenda (sucralose) to be fine for my blood sugar in the servings or less per day my diet (Atkins) allows, but you could substitute a more "natural" sweetener like stevia, xylitol, or erythritol and achieve similar results. One of the authors being a nutritionists specifically uses only stevia glycerite with her dishes. I fully realize what works for me might not work for other peoples, so that is the freedom this book encourages.

As for specialty foods, one of my goals with my section of the cookbook was only to use foods available from my local grocery store in the middle of Iowa. While I use items like almond flour and coconut meal, I grind those myself from blanched almonds or raw coconut from the baking aisle. I get frustrated when I have to run to the store or order a specialty ingredient online, so I specifically geared my book for those just starting the low carbing and wanting some sure-fire recipes to cook. For those curious, I went through my recipes and over 80% of my recipes were good for all phases of the Atkins Diet. (Induction Friendly)
