First and foremost, low-carbers in general will love this book as there are many recipes from strict Induction to moderate low-carbing. All recipes are less than 10 grams of carbohydrate per serving and most are less than 5 grams of carbohydrate per serving. Second, low-carbers who are either intolerant of gluten or have Celiac disease, or who adhere to the Paleo diet, will be thankful for this enormous resource, for low-carb recipes that are 100% wheat & gluten-free!

It is now becoming clear, with best-selling books out there like Wheat Belly by Cardiologist, Dr. William Davis that wheat is a problem for many people for a variety of reasons, so going gluten-free certainly helps people with weight loss. Even the Publisher, who has maintained a relatively healthy weight on low-carb diets found his appetite was still not quite curbed enough, his BP not quite under control enough, and his ideal weight always seemed that extra 10% out of reach. The problem turned out to be that he was still getting plenty of gluten (often used in low-carb baking) and that the gluten and other components of the wheat flour were stimulating his appetite, as well as causing inflammation with subsequent water retention (6lbs). That much water added to the circulatory system exerts increased pressure on the arteries, and makes it much more difficult to control BP. By going gluten-free, the last few stubborn pounds started melting away and, very quickly, so did the water. His blood pressure normalized and now he uses 1/4 of the medications he did before, saving more than $1,000 per year, while looking good and feeling great. Needless to say he was convinced - and so it was that this cookbook project was started!

These recipes are incredibly innovative, simply wonderful breakthroughs! It is one thing to create low-carb and sugar-free recipes, most of us have a pretty good handle on that by now, but it is often quite another thing to also make those same recipes gluten-free.
